Discover delicious, easy-to-make waffle recipes!

The waffle is an essential and much-loved pastry.

This culinary preparation is very popular in many parts of the world, although it can vary considerably in shape, texture and accompaniments depending on the region and local culinary tradition. Waffles are generally made from a dough of flour, eggs, milk or water, sugar, yeast or baking powder, and sometimes butter or oil. The batter is baked between two hot plates, usually in a device called a waffle iron, to create a texture that’s soft on the inside and crisp on the outside.

The Liège waffle: crunchy and soft at the same time

The Liège waffle is a Belgian speciality, known for its soft texture, slightly crispy outside and topped with pearl sugar lumps. Here’s a recipe for making authentic Liège waffles:

Ingredients:

500 g flour

150 ml warm milk

15 g fresh baker’s yeast

2 eggs

250 g softened butter

200 g pearl sugar (you can find pearl sugar in stores or make your own)

1 teaspoon vanilla extract

1 pinch salt

1 pincée de sel

instructions:

Dissolve the yeast in the warm milk and leave to stand for about 10 minutes, until frothy.

In a large bowl, sift half the flour and add the salt.

Make a well in the center of the flour mixture and pour in the diluted yeast mixture.

Mix lightly to incorporate some of the flour.

Add the beaten eggs and vanilla extract to the mixture. Mix well.

Add the remaining flour gradually and knead the dough until smooth.

Then add the softened butter to the dough and knead well until completely incorporated. The dough will be sticky, but this is normal.

Cover the bowl with a clean cloth and leave the dough to rest in a warm place for about 1-2 hours, until it has doubled in volume.

Once the dough has risen, add the pearl sugar and knead gently to distribute it evenly.

Preheat your waffle iron over medium-high heat.

Divide the dough into golf-ball-sized portions.

Shape each portion into a ball.

Place a ball of dough in each section of your hot waffle iron and close.

Bake the waffles for about 4 to 6 minutes, or until golden brown.

Remove the waffles from the waffle iron with a spatula and allow to cool slightly before serving.

The Brussels waffle: An easy-to-make must-have

Brussels waffles, also known as “gaufres bruxelloises”, are a delicious Belgian specialty, known for their light, crispy texture. Here’s a classic Brussels waffle recipe for you to try:

Ingredients:

500 g flour

15 g fresh baker’s yeast

125 ml warm milk

2 eggs

100 g melted butter

1 pinch salt

1 tablespoon sugar

1 teaspoon vanilla extract

Powdered sugar (for dusting)

Whipped cream or ice cream (for serving, optional)

Instructions:

Dissolve the yeast in the warm milk and leave to stand for about 10 minutes until foamy.

In a large bowl, sift the flour and add the sugar and salt.

Make a well in the center of the flour mixture and pour in the diluted yeast mixture. Mix lightly to incorporate some of the flour.

Add the beaten eggs, vanilla extract and melted butter to the mixture.

Mix well until smooth. The dough should be fairly liquid, so if it’s too thick, you can add a little more milk.

Cover the bowl with a clean cloth and leave the dough to rest in a warm place for about 1-2 hours, until it has doubled in volume.

Once the dough has risen, preheat your waffle iron.
